Today is the most glorious day of the year. No, it's not Christmas and it's not my birthday but it might as well be. Today is National Taco Day. It is a day that we take a moment to reflect on the Mexican treat that has brought so much joy to our lives over the years. I lived in Mexico when I was little and I grew up in Texas so I know a thing or two about tacos. When I moved to New York it took me a while to find places that made tacos correctly. You have to look for them, but they are there. Archaeological evidence shows that the Native Americans of Mesoamerica have been eating stuff wrapped in corn tortillas for millennia. It is only in the last hundred years that the flour tortilla was invented along the Texas/Mexico border. Whichever way you like it, tacos are a staple of American cuisine now.Â
Truth is I love all tacos. Even a crappy taco is still pretty good. I've indulged in Taco Bell during late night drunken meals. It's not my first choice, I'd rather go to a taqueria that's open late but sometimes you've got to make due with what's available to you. I like different things in my tacos beef, carnitas, chorizo, queso fundido, etc. I'm not about to eat tripe or tongue because I don't particularly like it, but if that's your thing more power to you. So, eat some tacos tonight and be thankful to the corn gods for their gift.Â
